While I'm at it, I'd like to replace the Stored Items Classic menu (mmStoreddisplaysUI.MMStoredDisplayMenu) with the new-ish version. What name do I call that by?

Asker, Is there a reason you do not want to use the ArcFM Toolbar? It will include the new Attribute Editor and Stored Items dropdown. I would recommend this over duplicating it's contents.
You will not find ProgIDs for items in the documentation, but you can find out this information if you are a developer by looking around at assembly information.
Here are the different items that make up the new Stored Display area of the ArcFM Toolbar
Save As: mmFrameworkUI.SaveAsCommand

The reason being we have a few toolbars that encompass most of the user workflows, and typically users only have our toolbars visible on screen to maximize screen real estate.
